Spicy Lamb Burgers with Yogurt Relish

Makes 8-10 burgers.  Takes about 30 minutes to prepare and 10-30 minutes cooking time.

Ingredients

For the spicy lamb burgers

  • 1 kilogram of minced lamb
  • 2 crushed garlic cloves
  • 1 onion, finely chopped
  • 1-2 tablespoons of mango chutney
  • 3 cm piece of fresh ginger, peeled and grated
  • 1 red chilli, seeds removed and finely chopped
  • 1/4 teaspoon of ground turmerice
  • 1 teaspoon of crushed coriander seeds
  • 1 teaspon of crushed cumin seeds
  • salt and freshly ground black pepper for seasoning
  • oil for brushing
  • flat bread, pitta bread or burger buns to serve

For the yogurt relish

  • 6 ripe tomatoes, cut into quarters, de-seeded and diced
  • 200 gram tub of Greek yogurt
  • bunch of fresh coriander, chopped roughly
  • 1 small red onion, finely chopped
  • squeeze of lemon juice

Preparation Method

1) Place all the ingredients in a large mixing bowl, season well with the salt and pepper and mix by hand until combined (if you prefer, you can use a food processor until the ingredient are just starting to hold but be careful not to over-work the mixture).

2) Divide and shape the mixture into 8 to 10 burgers, then place the burgers on tray, cover with cling film and keep in the fridge for at least 30 minutes.

3) When you are ready to cook them, brush with a little oil to prevent them from sticking and place on the barbecue over medium hot coals for about 5 minutes each side.

4) For the relish, mix the yogurt together with the tomatoes, coriander, onion and lemon  juice and season with salt and pepper. Serve the relish inside the bun with the burgers, or as an accompanying dipping sauce.
