Fancy cooking something a little different tonight for dinner while waiting to Play Keno. Well why not make some lamb koftas before heading to the Internet Casino (or to put it more simply meatballs) and try one of our delicious yogurt sauces to go with them.
It’s very easy, just like understanding Roulette Rules. First off, you will need the following ingredients to make the lamb koftas, which will serve about 3 people:
- 140 grams of wheat germ
- 250 grams of minced lamb
- 1 egg
- 1 medium onion, chopped finely
- 140 grams of pine nuts, chopped finely
- 2 tablespoons of fresh parsley, chopped finely
- 1 tablespoon of olive oil
Preparation method for the koftas
- Place the wheat germ into a bowl and cover with cold water. Leave to stand for 10 minutes, then drain and pat dry with kitchen roll to remove any excess water.
- Next place the wheat germ, mince, egg, pine nuts, onion, and parsley into a bowl and mix together. Then roll the mixture into small balls and place on a greased baking sheet, cover with cling film and put in a fridge for 30-40 minutes.
- Heat the oil in a large frying pan and fry the balls, turning regularly, until they are brown and cooked all the way through.
And now for the yogurt sauces to go with them. You can choose from either a cool cucumber and mint sauce or if you feel like spicing things up a bit, why not try our fantastic chilli sauce?
For the cucumber and mint yogurt sauce you will need:
- 110 grams of yogurt
- Half a grated cucumber
- Small bunch of chopped fresh mint
- Juice and zest of 1 lemon
For the spiced yogurt sauce, the ingredients are as follows:
- 1 red Thai chilli, chopped finely and the seeds removed
- 1 tablespoon of chopped fresh mint
- 1 tablespoon of chopped fresh parsley
- 1 tablespoon of chopped fresh coriander
- 1 clove of crushed garlic
- ½ teaspoon of ground cumin
- 200 grams of thick low fat Greek yogurt
In both cases, simply mix the yoghurt ingredients together in a bowl and once you are ready to serve the hot kofta balls, top them off with a dollop of either yogurt sauce. Delicious!
